Chicken with Mango Salsa

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Serves: 4

Ingredients:

  • 1kg  chicken breast fillets (4), skin on
  • 2 tbs olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sweet paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp freshly ground black pepper
  • Mixed salad leaves, to serve

Mango salsa

  • 1 ripe mango
  • 1 avocado, halved, stone removed, peeled, finely chopped
  • 1/2 red onion, finely chopped
  • 1 tbs fresh lime juice
  • 1 tbs finely shredded fresh mint

 

Method:

Step 1. Using a sharp knife, score the chicken breast (skin side up) at 2cm intervals.

Step 2. Combine the seasonings and oil to form a paste. Rub all over the chicken breasts; place in a food storage bag and refrigerate for at least 1 hour. Grill the chicken for about 7 to 10 minutes on each side, depending on thickness. Chicken is done when juices run clear when pricked with a fork.

Step 3. Meanwhile to make the Mango Salsa, dice Mango cheeks and avocado. Combine with onion, lime juice and mint.

Serve with chicken and salad leaves.
