Thai Beef Salad

Ingredients
  • 200g beef fillet, grilled medium rare and thinly sliced
  • 50g Spanish onion finely chopped
  • 1 cucumber cut in half length ways
  • 4 large lettuce leaves
  • Thai Salad Dressing:
  • 2 tsp garlic finely chopped
  • 1 tsp finely chopped red chilli
  • 3 tsp fish sauce
  • 3 tbsp lime or lemon juice
  • 1 tsp sugar
  • 1 tbsp water
Instructions
  1. Combine all salad dressing ingredients in a small sauce pan and stir over a medium heat until simmering. Set aside until mixture reaches room temperature.
  2. In a large bowl toss the beef fillet, onion and cucumber in the salad dressing.
  3. Place lettuce leaves on serving plates and top with beef salad mixture.
  4. Serve as entrée for four or a lunch for two.
